Tomatoes are about the easiest vegetable to grow. It's doesnt take much work and tomatoes can grow in almost all weather and soil conditions.

I agree. You can even get a ripe tomato and throw it in your backyard. After two weeks you will see the new tomatoes growing. Tomatoes can even be grown indoors on a pot. But for more fruits, you have to apply some organic fertilizers during its flowering stage. Eggplants just like tomatoes are also easy to grow and maintain.
